    Caramel S'mores Rice Krispie Treats

    These s'mores inspired rice krispie treats with caramel are exactly what you need this summer. They're so simple to make and come together in less than 30 minutes. Load them up with graham crackers, chocolate, chewy caramel, and even more marshmallows for the dreamiest, gooeyest rice krispie treats you'll ever have!

    • Butter
    • Vanilla

    Instructions

    Homemade rice krispie treats are such a classic childhood dessert. But in my opinion, their simplicity and delicious, gooey-ness makes them an essential recipe for bakers of all ages! They're a great no-bake recipe that comes together in one pot and under 30 minutes. Go with the caramel s'mores theme, or mix in your favorite extras!

    FAQ

    Top five tips for making homemade rice krispie treats:

    1. Line your pan with parchment paper and grease the parchment paper with cooking spray or a neutral oil. This will ensure the rice krispie treats don't stick to the paper or pan!
    2. Once you have fully mixed in all of your add-ins, quickly transfer the mixture to the baking pan. If you wait too long, it becomes too sticky and difficult to work with.
    3. Use a ⅓ measuring cup or small glass to flatten the rise krispie treats out into the square pan.
    4. Allow them to set at room temperature for at least one hour before cutting.
    5. Use a very sharp knife and grease it lightly for easy, clean cuts.

    The best part about homemade rice krispie treats is that they are fully customizable so you can add all of your favorite add-ins! Use a your favorite cereal, add in different chocolate candies, or leave plain!

    Baking in grams

    All of the recipes on this blog are carefully developed to create incredibly delicious baked goods that you can easily recreate in your own kitchen with success. The only way this is possible is to standardize the way ingredients are measured - by weight. Volume measurements are extremely inaccurate and leave room for significant errors. Not all measuring cups are made equally, so your one cup of flour will be different from my one cup of flour. By providing precise measurements in grams (aside from minor ingredients, which are given in tsp/tbsp), I can ensure that you can make the recipe accurately and with less cleanup! All you need is this kitchen scale. 

    If this still isn't enough to convince you, I have provided volume measurements in the recipe card. If you are interested in understanding the conversions, this is the best conversion chart.

    Description

    These caramel s'mores rice krispie treats are a riff off of the childhood classic with the addition of chocolate, graham crackers, and chewy caramels!


    Ingredients

    Scale
    • 113g (½ cup) unsalted butter
    • 1 tsp vanilla
    • 20 oz mini marshmallows + more for topping
    • 185g (6 cups) rice krispies cereal
    • 140g (1 sleeve; 8 crackers) graham crackers (crushed into small pieces) + more for topping
    • 2 oz semisweet chocolate (roughly chopped) + more for topping
    • 15 chewy caramels (cut into small pieces) + more for topping

    Instructions

    1. Line a 9x9 inch pan with parchment paper and lightly grease the paper with cooking spray or neutral oil.
    2. In a large saucepan, heat the butter and vanilla over medium heat until fully melted.
    3. Turn the heat down to low-medium heat and add the marshmallows, stirring frequently with a rubber spatula until fully melted.
    4. Remove from heat and add in the rice krispies cereal and graham crackers, mixing until fully coated.
    5. Allow the mixture to cool for a few minutes, then fold in the chopped chocolate and chewy caramels.
    6. Immediately transfer to the prepared pan and pack in with a ⅓ measuring cup into an even layer.
    7. Top with extra mini marshmallows, graham crackers, chocolate, and caramels, as desired.
    8. Optional: Broil for 3-5 minutes to toast the marshmallows and melt the chocolate and caramels slightly.
    9. Allow the rice krispies to set at room temperature for at least one hour.
    10. Cut into 16 squares and enjoy!
