As the second recipe in my Weeknight Dessert series, this 30 minute edible funfetti cookie dough is such a fun way to create some joy and whimsy after a long work day. It tastes just as amazing as regular cookie dough but made safe to eat with heat treated flour and no egg! So you can eat as much as you want without breaking out into hives. Use salted European-style butter and a generous splash of vanilla extract for a well-rounded, elevated flavor. And don't forget your favorite rainbow sprinkles!

30 Minute Edible Funfetti Cookie Dough
Ingredients
- 210 g (1 ¾ cups) all-purpose flour
- 100 g (½ cup) granulated sugar
- 106 g (½ cup) light brown sugar
- ½ teaspoon kosher salt
- 170 g (12 tablespoon) salted butter
- 1 tablespoon vanilla extract
- 85 g (½ cup) rainbow jimmy sprinkles
Instructions
- In a small bowl, add the flour. Heat in the microwave in 30 second increments until it reaches 160 degrees F. Set aside to cool.
- In a medium bowl, add the sugars, salt, butter, and vanilla. Use an electric hand mixer to beat until light and fluffy, about 2-3 minutes.
- Add in the cooled flour and mix on low speed until fully combined. It will be crumbly but that's okay, it will come together with the sprinkles.
- Fold in the sprinkles with a rubber spatula until evenly dispersed and the dough is cohesive.
- Use a 3 tablespoon cookie scoop to portion into bowls. Top with more sprinkles and enjoy!
