Ingredients

  • 210 g (1 ¾ cups) all-purpose flour
  • 100 g (½ cup) granulated sugar
  • 106 g (½ cup) light brown sugar
  • ½ teaspoon kosher salt
  • 170 g (12 tablespoon) salted butter
  • 1 tablespoon vanilla extract
  • 85 g (½ cup) rainbow jimmy sprinkles

Instructions

  • In a small bowl, add the flour. Heat in the microwave in 30 second increments until it reaches 160 degrees F. Set aside to cool.
  • In a medium bowl, add the sugars, salt, butter, and vanilla. Use an electric hand mixer to beat until light and fluffy, about 2-3 minutes.
  • Add in the cooled flour and mix on low speed until fully combined. It will be crumbly but that's okay, it will come together with the sprinkles.
  • Fold in the sprinkles with a rubber spatula until evenly dispersed and the dough is cohesive.
  • Use a 3 tablespoon cookie scoop to portion into bowls. Top with more sprinkles and enjoy!
