    This glazed apple coffee cake is unlike any breakfast cake you’ve ever had thanks to The Spice House Cinnamon Maple Sugar and Saigon Cinnamon. These two spices create a warming cinnamon sugar swirl and an oat streusel topping that’s almost reminiscent of an oatmeal cookie. Those two elements paired with the soft apple cake create the perfect cozy autumn breakfast treat!

    Glazed Apple Coffee Cake

    This glazed apple coffee cake is unlike any breakfast cake you’ve ever had thanks to The Spice House Cinnamon Maple Sugar and Saigon Cinnamon.     Ingredients

    For the cinnamon swirl:

    • 106 g (½ cup) Light brown sugar
    • 1 teaspoon The Spice House Cinnamon Maple Sugar
    • 2 teaspoon The Spice House Saigon Cinnamon

    For the streusel topping:

    • 100 g (½ cup) Quick cooking oats
    • 106 g (½ cup) Light brown sugar
    • 1 tablespoon The Spice House Cinnamon Maple Sugar
    • 2 teaspoon The Spice House Saigon Cinnamon
    • ¼ teaspoon Nutmeg
    • ¼ teaspoon Allspice
    • ¼ teaspoon Cloves
    • ¼ teaspoon Ginger
    • 113 g (8 tablespoon) Unsalted butter, cold & cubed

    For the apple cake:

    • 330 g (2 ¾ cup) All-purpose flour
    • 2 teaspoon Baking powder
    • ½ teaspoon Baking soda
    • ½ teaspoon Salt
    • 2 teaspoon The Spice House Saigon Cinnamon
    • ¼ teaspoon Nutmeg
    • ¼ teaspoon Allspice
    • ¼ teaspoon Cloves
    • ¼ teaspoon Ginger
    • 85 g (6 tablespoon) Unsalted butter, room temp
    • 142 g (¾ cup) Brown sugar
    • 132 g (â…” cup) Granulated sugar
    • 3 Eggs, room temp
    • 1 teaspoon Vanilla extract
    • 150 g (â…” cup) Whole milk, room temp
    • 56 g (¼ cup) Plain whole milk yogurt, room temp
    • 130 g (½ cup) Applesauce
    • 110 g (½ cup + 1 tbsp) Oil
    • 200 g (about 2) Honeycrisp apples, peeled and grated

    For the glaze:

    • 113 g (1 cup) Powdered sugar
    • 30 g (2 tablespoon) Plain whole milk yogurt
    • 10 g (1 tablespoon) Whole milk

    Instructions

    For the cinnamon swirl:

    • In a small bowl, combine the brown sugar, cinnamon maple sugar, and cinnamon. Set aside.

    For the streusel topping:

    • In a medium bowl, combine the oats, sugars, and spices. Add in the cubed cold butter and squish the pieces together with your fingers until it is fully incorporated. Place in the fridge until ready to use.

    For the apple cake:

    • Preheat the oven to 350 degrees F (180 degrees C). Line a 9"x9" pan with parchment paper long enough to hang over the sides for easy removal.
    • In a medium bowl, combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg, allspice, cloves, and ginger. Set aside.
    • In the bowl of a stand mixer fitted with a paddle attachment, beat the butter, brown sugar, and granulated sugar for 2-3 minutes. Mix in the eggs and vanilla until fully combined.
    • Add half of the dry ingredients and mix until mostly combined. Then, mix in the whole milk, yogurt, applesauce, and oil, followed by the remaining dry ingredients.
    • Lastly, fold in the grated honeycrisp apples. Pour â…” of the batter into the prepared square pan. Top with all of the cinnamon swirl mixture, then gently pour the rest of the batter on top. Add the streusel on top and bake for about 1 hour until a toothpick inserted comes out clean.
    • .Allow the cake to cool before removing from the pan and topping with the glaze.

    For the glaze:

    • In a small bowl, whisk together the powdered sugar, yogurt, and milk until smooth.
    • Drizzle on top of cooled cake and serve!
