These yeasted Belgian waffles have a crisp, golden exterior, soft and fluffy interior, and a sweet, yeasted flavor. The batter can be made the night before, so the next morning all you need to do is whip them up in your waffle iron and drizzle a generous amount of maple syrup on top! As a fun, shareable (and stackable!) morning treat, they’re sure to be the star of the breakfast table!
In a large mixing bowl, whisk together the milk, melted butter, eggs, vanilla, and salt until well combined.
Add the flour, sugar, and yeast and mix until fully combined.
Cover the bowl with plastic wrap and place in the refrigerator for at least one hour or overnight.
When ready to make the waffles, place your waffle iron over low-medium heat.
Add about 1 cup of batter and cook until evenly golden brown, or about 2 minutes on each side. Set each waffle on a wire rack to cool slightly.
Serve immediately with butter, fresh fruit, and maple syrup.
Notes
Chill the batter overnight. For more depth of flavor, chill the batter overnight in the fridge. If you're in a pinch, chill it for at least one hour.
Skip the non-stick spray. To achieve crisp, evenly golden waffles don't use non-stick spray, just be sure to let your waffle iron heat up for a few minutes on both sides.
Set the cooked waffles on a wire rack. To avoid the fresh cooked waffles from losing their crispness, place them on a wire rack. If you set them on a plate, the steam will turn that crisp exterior soggy!
