For the cookies you'll need: flour, baking soda, baking powder, salt, butter, cream cheese, sugar, eggs, vanilla, powdered sugar.
For the lemon curd you'll need: egg yolks, butter, sugar, lemon juice, cornstarch, and salt.
Make the Lemon Curd
In a medium saucepan over low-medium heat, melt the butter. Whisk in the sugar mixture, then the lemon juice and egg yolks until fully combined. Stir the mixture for another 2-3 minutes or until large bubbles form. Immediately remove from heat. Strain and chill for at least 2 hours.
Make the batter
Cream together the sugars, cream cheese & butter. Add in the vanilla and eggs, beat until fully combined. Add in the dry ingredients and mix on low speed until just combined. Chill for 30 minutes.
Roll each cookie dough ball in your hands, then roll in the powdered sugar and place on the baking sheet spaced about 2 inches apart. Flatten the cookie dough out slightly and bake for about 12 minutes. Immediately press the centers with the back of a spoon.
Top with Lemon Curd
Once the cookies are cool, sprinkle each of them with powdered sugar. Add a dollop of lemon curd to the centers of each cookie and serve!
