Weigh out the ingredients
You'll need flour, sugar, cornstarch, eggnog, eggs, maple syrup, butter, vanilla, and salt.
Make the pastry cream
Make the pastry cream by simmering the eggnog and maple syrup, then tempering in the whisked egg yolk mixture. Remove from heat and blend in butter and vanilla, straining and chilling in the fridge.
In a large bowl, add all ingredients and use an immersion blender to blend until smooth. Alternatively, mix in a blender until smooth.
Make the crepe batter
Pour the crepe batter through a fine mesh sieve into another bowl.
Strain the batter
Make thin crepes over the stove until all batter is used. Place one crepe on a cake stand, then spread pastry cream on the crepe and place another on top. Repeat until all crepes are stacked, then top with powdered sugar and serve.
