Weigh out the ingredients
You'll need sugar, water, salt, cream of tartar, heavy cream, butter, and vanilla.
Add the sugar, salt, cream of tartar, and water to medium saucepan.
Mix with a rubber spatula until fully combined and all sugar granules are hydrated.
Heat the saucepan over medium heat, stirring frequently until the sugar turns a medium amber color. Immediately remove from heat.
Heat until golden
Add the heavy cream slowly, as the caramel will bubble up rapidly.
Add heavy cream
Stir until the heavy cream is fully combined.
Stir until fully combined
Add the butter and vanilla, and mix until fully combined.
Mix in the butter
Pour into a glass jar and place in the fridge until cool & thick. Enjoy with sliced apples, drizzled over ice cream, or use in another recipe!
