You'll need all-purpose flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, allspice, sugar, brown sugar, butter, vanilla, egg, banana, grated carrots, and pecans.
Make the batter
Cream together the sugars and butter. Add in the vanilla and egg and beat until fully combined. Add in the dry ingredients and mix on low speed until just combined. Lastly, fold in the mashed banana, grated carrots, and pecans.
Bake the muffins at 425 degrees F for 5 minutes, then turn down the oven to 350 degrees F and bake for an additional 20 minutes.
Allow the muffins to cool completely. Enjoy with your morning coffee :)
