You'll need cake flour, baking powder, salt, butter, sugar, milk, yogurt, oil, vanilla, and egg whites.
Make the batter
Combine the dry ingredients, then mix in the butter until it's pea-sized. Mix in the wet ingredients. Lastly, fold in the whipped egg whites.
Divide the batter between two 6inch cake pans and bake at 350 degrees F for about 30 minutes.
Cool on wire rack
Turn the cakes out onto a wire rack to cool completely.
Make the frosting
Make the mascarpone frosting by whipping together the mascarpone, heavy cream, and sugar.
Spread a thin layer of frosting on the first cake layer and pipe a dam around the edge. Fill in the center with fresh strawberries. Place the second cake layer on top.
Decorate the cake as desired with the remaining frosting and more fresh strawberries.
Cut the cake and serve!
