For the cookie dough, you'll need all-purpose flour, baking powder, salt, sugar, butter, vanilla, egg, and freeze dried strawberries.
For the cheesecake filling, you'll need milk, egg yolks, vanilla, sugar, cornstarch, butter, and vanilla.
Mix the dough
Cream together the sugar and butter. Add in the vanilla and egg and beat until fully combined. Add in the dry ingredients and mix on low speed until just combined. Lastly, fold in the freeze dried strawberries.
Cutout & bake
After the cookie dough has chilled, roll it out and use a cookie cutter to cut out cookies. Freeze the cutout dough for 15 minutes then immediately bake for about 12 minutes.
Make the filling
While the baked cookies cool, make the cheesecake filling. Start by making the pastry cream, then beat butter and cream cheese into it until smooth.
Assemble the cookies by piping the filling onto one cookie and pressing another one on top. Top with more freeze dried strawberries and enjoy!
