You'll need brown sugar, granulated sugar, egg yolks, milk, vanilla, and peanut butter.
Make the cookie dough
Make the cookie dough by combining the sugars & egg yolks, then mixing in the milk & vanilla, and lastly folding in the peanut butter.
Portion the dough
Using a 1 tablespoon cookie scoop, portion the cookie dough and freeze for 15 minutes.
Roll in sugar
Divide each of the frozen dough balls in two, and roll in sugar.
Press two together
Press the two dough balls together and place back on the baking sheet.
Using a fork dipped in sugar, make criss-cross indentations on each. Freeze for an additional 15 minutes.
Bake the cookies at 325 degrees F for about 12 minutes. Cool completely before assembling.
Make the pb frosting
Make the peanut butter frosting by beating together creamy peanut butter, butter, and powdered sugar. Add vanilla and a touch of heavy cream, mixing until smooth.
Pair the peanut butter cookies up, and sandwich them together with pb frosting. Dip each in melted chocolate and allow to set.
