For the graham cracker crust, you'll need graham crackers, brown sugar, butter, and salt.

For the ricotta cheesecake filling, you'll need cream cheese, ricotta, sugar, cornstarch, eggs, and vanilla.

In a food processor, pulse the graham crackers until they reach fine crumbs.

Add the remaining ingredients, and mix until fully combined.

Press the graham cracker crust mixture into a springform pan, then bake for 10 minutes.

Make the cheesecake filling by creaming together the cream cheese, ricotta, sugar, and cornstarch on low speed.

Mix in the eggs one at a time, adding in the vanilla with the last egg.

Pour the cheesecake filling over the cooled graham cracker crust, and smooth out the top. Bake for about an hour.

After baking, crack the oven door and leave the cheesecake for an hour. Then, take it out and leave for an additional hour at room temperature.
