You'll need almond flour, powdered sugar, cocoa powder, red food gel, egg whites, sugar, and vanilla.

Make the macaron batter

Make the macaron batter by sifting the dry ingredients twice, and making a swiss meringue. Add the red food gel to the meringue, then gently fold in the dry ingredients until the batter flows off of the spatula.

Pipe the macarons into hearts, bang the baking sheet on the counter a few times to release air bubbles, then rest for 30-40 minutes.

Bake the macarons at 300 degrees F for about 12-14 minutes.

Make the mascarpone frosting by whisking together the mascarpone, heavy cream, and sugar.

Pair the macarons up, then pipe the mascarpone frosting on each bottom heart. Gently sandwich with the top hearts.
