New York Style Bagels

Weigh out ingredients

You'll need all-purpose flour, bread flour, yeast, malted milk powder, salt, sugar, water, egg white, and bagel seasonings.

Combine  all ingredients

Add all of the ingredients to a bowl of a stand mixer fitted with a dough hook.

Mix dough until smooth

Mix the dough on medium speed until fully combined and smooth.

Proof dough overnight

Transfer dough to a greased bowl, cover, and proof in the fridge overnight.

Divide dough & proof again

Once dough has proofed, divide it into 12 equally sized balls. Cover and allow to rise in a warm environment for one hour.

Shape the bagels

Once the dough is room temp and puffy, shape them into bagels by pressing your thumb in the center and gently spreading them out.

Place bagels in water bath

Place the shaped bagels in a water bath for about 30 seconds on each side, then place back on baking sheet.

Bake!

Brush an egg white on the bagels and top with desired seasonings. Bake the bagels at 425 degrees F for 20 minutes.

Cool on wire rack

Allow bagels to cool on a wire rack completely before slicing.
