Weigh out the ingredients
You'll need egg whites, sugar, salt, vanilla, chocolate, and oil.
Make the swiss meringue
Combine the egg whites, sugar, and salt in a bowl. Place over a small saucepan of simmering water, and whisk frequently until it reaches 160 degrees F. Move the bowl to the stand mixer and whisk on medium-high speed until stiff peaks form.
Pipe the meringue into kisses on the prepared baking sheet. Bake for 1 ½ - 2 ½ hours or until they are no longer sticky to the touch and can easily peel off of the baking sheet. Turn the oven off and leave the meringue cookies inside for an additional hour to continue to dry out.
Pipe into kisses & bake
Dip each meringue cookie in the melted chocolate and place on a piece of parchment paper to set.
