Make the brioche and proof overnight or in a warm environment for one hour.
Roll out the dough and cut out as many donuts as possible. Re-roll and cut out more donuts as needed.

Allow the donuts to rise at room temperature for about 45 minutes. Meanwhile, bring a pot of neutral oil to 335 degrees F.

Fry the donuts for about 90 seconds on each side, then transfer to a wire rack to cool.

Make the maple glaze, by heating all ingredients in a saucepan over medium heat until fully combined and smooth.
