Lemon Meringue Cupcakes

For the cupcakes, you'll need: cake flour, granulated sugar, baking powder, salt, butter, oil, whole milk, greek yogurt, vanilla, egg whites.

Make the cupcake batter

Make the cupcake batter by beating the butter into the dry ingredients, the mixing in the wet ingredients. Fold in the whipped egg whites at the end.

Bake!

Divide the batter between the 12 cupcake liners and bake for 16-18 minutes at 350 degrees F.

Cool on wire rack

Allow the cupcakes to completely on a wire rack before decorating,

Assemble

With a small round cookie cutter, remove the centers of the cupcakes, pressing about ⅔ of the way into them. Fill the cupcakes with lemon curd and place the top of the centers back on.

Decorate!

Make the swiss meringue then pipe the meringue as desired and use a kitchen torch to give them a toasted look. Enjoy!
