Lemon Bars with Shortbread Crust

Weigh out ingredients


You'll need all-purpose flour, almond flour, powdered sugar, butter, almond extract, lemons, cornstarch, sugar, and eggs.

Make the shortbread crust


Combine the flours, powdered sugar, and salt. Cut the cubes of butter into the flour mixture with your fingers. Press into a loaf pan and bake for 15 minutes at 350 degrees F.

Make the filling & bake!


Whisking together the lemon juice, lemon zest, granulated sugar, cornstarch, and eggs. Pour over the baked crust, reduce oven temp to 325 degrees F and bake for 15 minutes.

Chill then enjoy! 


Allow the bars to cool completely at room temperature. Then, chill in the fridge for about one hour before serving. Enjoy!
