Deep Dish Coconut Cream Pie

For the pie crust, you'll need butter, flour, heavy cream, and salt.

For the coconut cream filling, you'll need shredded coconut, sugar, coconut milk, eggs, heavy cream, cornstarch, butter, vanilla extract, and salt.

Mix the dough together in a stand mixer, then fold according to instructions. Shape the dough into a disk, wrap tightly in plastic wrap, and chill for at least one hour or overnight.

Roll out dough into a circle and carefully place into the pie pan, pressing up against the sides. Cover and chill in fridge for at least 20 minutes. Crimp the edges, dock the bottom and sides, then cover and chill for another 30 minutes.

Place parchment paper over the pie crust and fill with pie weights. Bake for about 14-16 minutes until the crimp is golden. Remove pie weights, then brush the pie crust with an egg wash all over, Tent the crimp with aluminum foil, then bake for an additional 12-14 minutes..

In a small frying pan over low-medium heat, toast the shredded coconut for about 10 minutes, stirring frequently until aromatic. Set aside.

Simmer coconut milk and heavy cream and separately whisk together other ingredients until fully combined. Temper the eggs into cream and return to medium heat. Strain filling, add butter and vanilla, blend until smooth, and, fold in the toasted coconut.

Pour the filling into the cooled pie crust and smooth out the top. Press plastic wrap up against the surface to prevent a skin from forming and chill in the fridge overnight.

When ready to serve the pie, make the whipped cream. In a large bowl, add the heavy cream and sugar. Use an electric hand mixer to whip the cream until medium peaks form.

Spread an even layer of whipped cream on the pie.

Transfer the remaining whipped cream to a piping bag with a star tip, and decorate the pie as desired. Garnish the pie with toasted coconut flakes, and enjoy!
