Herbed Goat Cheese Pastries

Description

These rugelach-inspired pastries are made with a whole wheat cream cheese dough, filled with herbed goat cheese, and topped with sesame seeds & a honey glaze.


Ingredients

For the Dough:

  • 170g unsalted butter (room temp)
  • 170g cream cheese (room temp)
  • 180g whole wheat flour
  • 1/4 tsp salt
  • egg wash ( 1 egg + 1 tbsp water)
  • sesame seeds 

For the Filling:

  • 6 oz herbed goat cheese (room temp)

For the Honey Glaze:

  • 40g honey
  • 20g granulated sugar
  • 60g water

Instructions

For the Dough:

  1. In a large bowl, beat the butter and cream cheese together until smooth.
  2. Fold in the flour and salt until fully combined.
  3. Shape dough into a disk, wrap with plastic wrap, and chill in the fridge for at least 2 hours or overnight.

For Assembly:

  1. Preheat the oven to 350 degrees F (180 degrees C) and line a baking sheet with parchment paper.
  2. Divide the dough into 10 balls (about 50g each).
  3. Roll each ball out into a rough rectangle and spread a thin layer of herbed goat cheese all over. 
  4. Roll the dough up from the long side and seal the seam, then roll each end up to shape into an S.
  5. Repeat until all dough is shaped, then freeze all of them for 15 minutes.
  6. Transfer the pastries to the prepared baking sheet and brush each with an egg wash, then sprinkle with sesame seeds.
  7. Bake the pastries for about 30 minutes or until evenly golden. 
  8. Allow to cool on the baking sheet for a few minutes, then transfer to a wire rack and brush with the honey glaze.

For the Honey Glaze:

  1. Combine the honey, sugar, and water in a small saucepan.
  2. Boil for 4 minutes, then allow to cool before brushing on the pastries.

Notes

  • Be sure to use whole fat block cream cheese for the dough.
  • Chill the dough for at least 2 hours or overnight. 
  • Ingredient alternatives: use all-puporse flour instead of whole wheat flour; use soft sheep's milk cheese instead of goat cheese.
